Helichrysum is often associated with cosmetics, but few know its extraordinary potential in the kitchen. Its enveloping scent, with notes of licorice and rosemary, is the perfect ingredient to give an unexpected touch to your everyday dishes. Add it to creamy risottos, use it in legume soups or experiment with it with roasted potatoes for a surprising aromatic twist. Just a pinch is enough to transform a simple recipe into a new and refined experience.

The pharmaceutical use of Helichrysum dates back to Greco-Roman medicine.
Today it is a key ingredient in natural cosmetics, known for its ability to soothe the skin and reduce redness. Considered an effective natural antihistamine, it is also used in the treatment of allergic disorders such as rhinitis, conjunctivitis and inflammation of allergic origin.

1. Prepare a digestive herbal tea

Infuse a few leaves of helichrysum in hot water for 5-10 minutes. It has digestive and anti-inflammatory properties.

2. Season pasta and risotto

A little chopped helichrysum can add an aromatic touch to a mushroom or vegetable risotto.

Mix it with confit tomatoes and garlic for a simple pasta sauce.

3. With baked or pan-fried vegetables

Perfect with roast potatoes, aubergines, courgettes and peppers.

Add it to grilled vegetables for an intense aroma.

4. Add it to soups and broths

Use it whole and remove it before serving, as you do with bay leaves, to give an aromatic flavor to legume soups, vegetable broths or meat broths.

A recipe for you

Flavored chickpea soup

To prepare a chickpea and helichrysum soup, sauté an onion, a clove of garlic, a carrot and a chopped celery stalk in extra virgin olive oil. Add 250 g of soaked chickpeas (or 400 g already cooked), a diced tomato (or 200 g of puree) and 2 sprigs of helichrysum. Cover with a litre of vegetable stock and cook over low heat for about 1 hour and a half (40 min in a pressure cooker, 20 min if using already cooked chickpeas). Season with salt and pepper, and finish with a drizzle of oil and bread croutons.
