La vinificazione avviene in bianco, in atmosfera inertizzata. Il vino viene imbottigliato durante la fermentazione, senza aggiunta di lieviti o zuccheri. La presa di spuma è naturale. L’affinamento di 8 mesi in bottiglia sviluppa perlage fine, tensione e profondità aromatica.
Profilo organolettico
Colore rosa intenso e brillante.
Al naso fragola, lampone e fiori estivi, con una traccia minerale che richiama l’origine collinare e la vicinanza al mare.
Al palato è fresco, vibrante, equilibrato. Le bollicine sono sottili e persistenti, accompagnano un finale lungo, asciutto, netto.
Cosa è il metodo ancestrale
Il Metodo Ancestrale prevede l’imbottigliamento del vino durante la fermentazione, senza zuccheri aggiunti. La rifermentazione avviene in bottiglia in modo naturale.
Il risultato è un vino più diretto, meno artefatto, più fedele al vitigno.
