A differenza di molte olive nere presenti sul mercato, che vengono ottenute attraverso processi di ossidazione o trattamenti per uniformarne il colore, le nostre olive diventano nere semplicemente seguendo il loro naturale ciclo di maturazione, senza subire ulteriori processi. È proprio questo a renderle così speciali: conservano un profilo aromatico più autentico, ricco e complesso, che ritrovi intatto anche nel paté.
