Grown on a slope of Etna, our dried laurel releases an intense and enveloping aroma. Naturally dried and preserved in a glass jar to maintain all its fragrance, it is the ingredient always at hand to flavor sauces, soups, marinades and preserves in oil. Thanks to its digestive properties, it makes the consumption of legumes lighter and, drunk in an infusion with honey and lemon, it aids digestion. An essential ingredient to bring the intense and genuine aroma of Mediterranean cuisine into your kitchen.

Laurel is rich in essential oils such as eucalyptol, geraniol and pinene, present in both the leaves and berries. It acts on the stomach to improve digestion, bringing calming and balancing benefits.

1) Tomato sauces and gravies

Add bay leaves when cooking simple sauces, such as tomato sauce or ragù, for a more intense and deep aroma.

2) Stewed lentils and other legumes

Add bay leaves to the sautéed carrots, celery and onion before seasoning and cooking the lentils covered in salted water and over low heat. Once cooked, season with a drizzle of raw extra virgin olive oil. Bay leaves make legumes more digestible.

3) Marinades and preserves

Add bay leaves to oil or vinegar preserves, such as olives or artichokes. Use in marinades for meat, fish and tofu.

4) Broad bean puree

Cook the broad beans with bay leaves for a more fragrant and digestive broad bean macco.

5) Risotto and cereals

Add a leaf to the cooking water of rice, barley or spelt for a delicate aromatic touch. Excellent in risottos with legumes or mushrooms.

A recipe for you

Yellow polenta with chickpea cream and bay leaves

Cook a creamy polenta by boiling water with a bay leaf, then remove it and add the corn flour, stirring until smooth. Prepare a chickpea cream by flavouring them in a pan with garlic, bay leaves, paprika and tahini, then blend them with lemon juice and a little water. For a crunchy touch, fry some bay leaves until golden and fragrant. Assemble the dish by pouring the polenta into the plates, covering it with the chickpea cream and finishing with the crumbled crunchy leaves.
