Zibibbo is an aromatic grape variety introduced to Sicily by the Arabs. When vinified dry in Marsala, it offers intense aromas of citrus, white flowers, and a marine saltiness.

  • Harvest: Picked at night between the third and fourth week of August.
  • Aging: 3 months in steel, 1 month in bottle

  • Pairings: Pairs well with white meats cooked with spices and flavorful crustacean or legume soups. It can also be an excellent match for spicy dishes without tomato or blue cheeses.
  • Appearance: Pale straw yellow color.
  • Nose: Intense citrus aromas like orange blossom and grapefruit along with delicate hints of eucalyptus.
  • Palate: Pleasant acidity, light structure, and enjoyable notes of lychee, banana with hints of oregano and sage that accompany a remarkable length of flavor.

Cantina Baglio Diar

For over twenty years, Biagio and Nicola di Girolamo have been leading certified organic and vegan viticulture, based on rigorous and transparent choices: vineyards free from contamination, natural treatments with copper, sulfur, and organic fertilizers, and only plant-based auxiliaries used in the winery.

The vineyards extend in the southwest of Sicily, between Trapani and Mazara del Vallo. The different altitudes, from sea level up to over 250 meters, allow each grape variety to be best enhanced: Grillo and Inzolia, for example, are grown at sea level where they benefit from the same pleasant salinity that can be found in the glass. Zibibbo, Catarratto, Perricone, and Nero D’Avola, on the other hand, are found at altitudes above 250 meters above sea level where, thanks to the temperature difference between day and night, good acidity is promoted, which is excellent for making aromatic or more structured wines fresh and elegant.
