Catarratto is a very ancient native Sicilian grape variety.

Although widely grown in Sicily, the bottle from Cantina Baglio Diar is a special opportunity to taste it in its pure form, as the grapes are organically cultivated and benefit from sun exposure at 350 m above sea level.

  • Grapes: 100% Catarratto
  • Designation: IGP Terre Siciliane
  • Harvest: Collected between the third and fourth week of September.
  • Vinification: After a very gentle pressing of the grapes, fermentation takes place at a temperature of 15°C for 15 days.
  • Aging: 4 months in barriques, 3 months in steel, and finally 1 month in the bottle
  • Alcohol content: 13%
  • Serving temperature: 10°C
  • Pairings: Pairs well with roasted white meats, grilled shellfish, and sautéed vegetables. Try it with smoked meat carpaccios and blue cheeses.
  • Appearance: Intense straw yellow color with golden reflections.
  • Nose: Intense aromas of dried figs, anise, and vanilla.
  • Palate: Notes of preserved lemon, ripe apricot, and toasted hazelnuts.

Cantina Baglio Diar

For over twenty years, Biagio and Nicola di Girolamo have been leading certified organic and vegan viticulture, based on rigorous and transparent choices: vineyards free from contamination, natural treatments with copper, sulfur, and organic fertilizers, and only plant-based auxiliaries used in the winery.

The vineyards extend in the southwest of Sicily, between Trapani and Mazara del Vallo. The different altitudes, from sea level up to over 250 meters, allow each grape variety to be best enhanced: Grillo and Inzolia, for example, are grown at sea level where they benefit from the same pleasant salinity that can be found in the glass. Zibibbo, Catarratto, Perricone, and Nero D’Avola, on the other hand, are found at altitudes above 250 meters above sea level where, thanks to the temperature difference between day and night, good acidity is promoted, which is excellent for making aromatic or more structured wines fresh and elegant.
