Perfect for marinating tofu or tempeh: let it rest for a few hours with the dressing, then cook in a pan or oven. Result: citrus aroma, golden crust.

The story of Agricolab begins with the meeting of Peppe and Fawn, which took place in 2010 in Argentina. After living and running a business in Singapore, they return to Sicily with the intention of exploring the island in search of small producers and quality raw materials. Their mission is to create a network in the agricultural supply chain, bringing together farmers and peasants with a story to tell. The stories of people and territories become the main ingredients of Agricolab's menu, a venue that Peppe and Fawn founded in 2018 after exploring the best food and wine offerings of Sicily.

A recipe for you

Couscous with chickpeas, grilled vegetables, and fermented lemon dressing

Ingredients for 2 people:

  • 120 g of whole wheat couscous
  • 160 g of cooked chickpeas
  • 1 zucchini
  • 1 red bell pepper
  • ½ red onion
  • 2 tablespoons of Boniviri dressing
  • 1 tablespoon of Boniviri extra virgin olive oil
  • Boniviri toasted almonds (optional)
  • Salt and pepper to taste

Instructions:

Prepare the couscous as indicated on the package, fluffing it with a fork and a drizzle of oil.
Cut the vegetables into strips and grill them until soft and slightly charred.
In a bowl, combine the couscous, chickpeas, and grilled vegetables.
Dress with the Boniviri dressing and season with salt and pepper.
Finish with Boniviri toasted almonds for a crunchy touch.
