Format

From the Tonda Iblea, a native variety of south-eastern Sicily, Francesco extracts a monocultivar extra virgin olive oil, selected by Gambero Rosso among the best Sicilian extra virgin olive oils.

Produced in limited quantities and from organic farming, this fine oil stands out for its full-bodied and intense flavour, with perfectly balanced spicy notes.

  1. Organic and 100% Italian extra virgin olive oil.
  2. Processed with mechanical processes and cold pressing.
  3. Only EVO oil from the latest olive oil campaign until stocks last. The year of the olive oil campaign is indicated in transparency on the label.
  4. The olives are harvested when not yet ripe and milled within a few hours , prioritizing quality and nutritional properties over quantity extracted.
  5. The mill must be cleaned scrupulously from the previous milling, to avoid contamination of the fine quality of our oil. Some producers of the Boniviri network are investing in a private mill .
  6. Stored in silos under nitrogen , the oil is tapped and bottled only when the previous supply runs out.
  7. Bottled in dark glass , the only material that is not subject to the corrosive effect of oil.

Francesco Scollo earned a PhD on Sicilian extra virgin olive oil, experimenting with innovative techniques on the genetic traceability of olive varieties. In 2011 he founded his company on the Iblei Mountains, near Chiaramonte Gulfi and Ragusa. This land is known for the cultivation of olive trees, interspersed with almond and carob trees. His organic oil, in particular the monocultivar Tonda Iblea, is included in the Gambero Rosso and Slow Food guides on the best Italian extra virgin olive oil.
