THE HISTORY

On the slopes of the highest volcano in Europe, the land of the Virzì Farm extends over a fertile valley. A century-long tradition, handed down to the youngest member of the family, Davide, a jurist with a

passion for agriculture and extra virgin olive oil. In a privileged place, over 700 meters from sea level, the farm is dedicated to the cultivation of olives, almonds and pears, placing at the center of the project the focus on organic production and the mission of preserving biodiversity, protecting and promoting the varieties indigenous to this wonderful part of Sicily.

Thanks to the height above sea level, the olive trees are naturally protected from flies and parasites and thrive on fertile lava soils. The olives are harvested while still green, so as to preserve their nutritional properties and ensure a high level of polyphenols. The presence of the volcano, and of the lava soils, gives the olive trees an abundance of minerals and nourishment. The result is an oil with strong flavors and persistence over time of aromas and floral notes. The result of a blend of Sicilian indigenous varieties, such as Nocellara dell'Etna, which goes perfectly with traditional Mediterranean dishes.
