HISTORY
Not far from the nature reserve of Vendicari, in the district of Bimmisca, ancient rows of olive trees flank the slope of a hill. These are the properties of the Sallicano family, today cared for by brothers Sergio and Marianna. The farm has been on these lands for more than a century, where several crops have been grown, including the most important ones: olives and almonds. Today, the very young Sallicano brothers actively take care of all the phases of cultivation of the company, in organic farming, respecting the tradition. The production area is famous for the almond "pizzuta" of Avola, which can be seen in the photos of the company. Walking in the land, you can in fact admire the ancient olive trees next to the almond trees: a typical glimpse of Sicily.
Sergio and Marianna are the authors of a balanced oil that goes perfectly with the dishes of Mediterranean cuisine, without overwhelming the flavors. The cultivated varieties, Moresca and Biancolilla, are in fact varieties with delicate flavors, from which extracts an oil with clear and luminous reflections. The olive harvest of the Azienda Agricola Sallicano takes place during the month of September, at the right moment of ripeness. The extraction activities are entrusted to Frantoio Ruta, in Castelluccio, with extraction procedures cold that allow to preserve the nutritional and organoleptic properties of this oil.
