The extra virgin olive oil “Il Saggio” is balanced between 4 typical Sicilian cultivars:
25% Nocellara Etnea, 25% Nocellara del Belice, 25% Moresca 25% Biancolilla
Corrado Bonfanti's company, which produces this fine oil, has studied with Boniviri the right balance to enhance the properties of these varieties, seeking a taste that is pleasant raw for simple condiments and that also enhances more complex dishes.
- Organic and 100% Italian extra virgin olive oil.
- Processed with mechanical processes and cold pressing.
- Only EVO oil from the latest olive oil campaign until stocks last. The year of the olive oil campaign is indicated in transparency on the label.
- The olives are harvested when not yet ripe and milled within a few hours , prioritizing quality and nutritional properties over quantity extracted.
- The mill must be cleaned scrupulously from the previous milling, to avoid contamination of the fine quality of our oil. Some producers of the Boniviri network are investing in a private mill .
- Stored in silos under nitrogen , the oil is tapped and bottled only when the previous supply runs out.
- Bottled in dark glass , the only material that is not subject to the corrosive effect of oil.
