Recognizing a good extra virgin olive oil starts with knowing the producer. A quality oil is produced by those who pick the olives at the right level of ripeness and process them quickly, without neglecting the management of temperatures and oxidation processes. Furthermore, the use of private mills is often a sign of careful and contamination-free processing. Boniviri collaborates with producers who follow these principles, ensuring an oil that preserves its organoleptic and nutritional properties intact.
To best preserve extra virgin olive oil, it is recommended to store it away from sources of light and heat, such as stoves. A good place is a drawer or a cool pantry. Avoid moving the container often, as air can accelerate oxidation, especially in cans as they empty. Ideally, transfer the oil into smaller bottles, immediately after purchase, and maintain a constant temperature between 15 and 18 degrees, avoiding cellars that are too cold.
To choose a good oil at the supermarket, always check the label and look for the year the olives were harvested, an important piece of information for freshness, often not reported in commercial products. The expiration date refers to bottling and not to the time of harvest, so it is preferable to choose oils that state the specific year. Pay attention to the origin: the wording "EU/non-EU origin" indicates a mixture of oils from different origins and variable quality.
