HISTORY
Not far from the Vendicari nature reserve, in contrada Bimmisca, ancient rows of olive trees flank the hill. These are properties of the Sallicano family, now managed by siblings Sergio and Marianna.
The farm has existed for more than a century and during all this time olives and almonds have been cultivated.
Today the very young Sallicano siblings are actively involved in all phases of cultivation on the farm, according organic protocols and by respecting tradition.
The production area is famous above all for the "pizzuta" almond from Avola. By walking in the land, it is possible to admire the ancient olive trees side by side with almond trees: a typical glimpse of Sicily.
Sergio and Marianna are the authors of a balanced oil that goes perfectly with Mediterranean dishes without covering their flavors, in fact he cultivated varieties, Moresca and Biancolilla, can enrich the olive oil with delicate flavours.
The harvesting takes place during the month of September. Extraction activities are entrusted to the Ruta Oil Mill, in Castelluccio, with cold extraction procedures that allow the preservation of the nutritional and organoleptic properties of the olive.
BONIVIRI
The Boniviri Protocol
Boniviri selects small Italian farms that have three fundamental characteristics:
They are creators of excellent products in terms of quality and gastronomy
They are committed to a path of sustainability and social impact
With their work they are custodians of local values and heritage
Boniviri follows the producers during all the cultivation processes, working together with them to guarantee quality and sustainability.
For this reason, it is developing a shared protocol and a digital platform useful for mapping productivity and attention performance to the environment of the partner companies.
