Per chi oramai sa già che a quel coltivatore Boniviri non ci vuole proprio rinunciare, o per tutti coloro che desiderano nella propria dispensa un formato "scorta", Boniviri propone il suo olio extravergine di oliva anche in versione da 3 Litri in latta di alluminio. Il protocollo Boniviri prevede che l'oliva venga raccolta prima che maturi e molita entro 12 ore. Perché?

 

  • Acidità e gusto: Le olive raccolte prima della completa maturazione tendono ad avere una minore acidità rispetto a quelle mature. Questo porta a un olio con un gusto più delicato e bilanciato, con note fruttate e un sapore più morbido.
  • Aroma: Le olive immature conservano meglio gli aromi freschi e intensi, che vengono poi trasferiti all'olio durante il processo di estrazione. Questo contribuisce a un olio con un profumo più intenso e complesso.
  • Stabilità: Gli oli prodotti da olive immature hanno generalmente una maggiore stabilità e una durata più lunga rispetto a quelli ottenuti da olive mature. Questo perché contengono una maggiore quantità di antiossidanti naturali, che aiutano a proteggere l'olio dalla rancidità.
  • Qualità nutrizionale: Le olive immature contengono una maggiore concentrazione di sostanze nutritive, come polifenoli e vitamine, che vengono poi trasferite all'olio durante il processo di spremitura. Di conseguenza, l'olio ottenuto da olive immature può offrire maggiori benefici per la salute.

THE HISTORY

In the countryside of Rosolini, a few kilometers from Noto, Corrado Bonfanti loves to walk between the centennial olive trees of his land.

He knows them one by one and he proudly tells everything about them. He knows his trees very deeply and his devotion is what  makes his oil as a perfect Sicilian balance of flavors, scents and sensations.

Corrado's land has belonged to his family for many years: it is located in a privileged position in the countryside, where olive, almond and carob trees luxuriantly grow.

​Corrado is very attentive to all phases of cultivation, harvesting and extraction. He personally cares for the cultivation of olive trees according to the principles of organic farming. 

Olives are harvested during the month of September, at the proper time of ripeness. Extraction is carried out at the Ruta Oil Mill, in Castelluccio, using cold extraction procedures that allow the oil's nutritional and organoleptic properties to be preserved.

During this time of year, it is not uncommon to find Corrado at the mill, checking his olives and proudly observing the production of his oil.
